Providing default value for EDIT fields

I realise you can provide a default value for form elements in ADD mode, but I would like to do the same in EDIT mode, for form fields where the database field is currently NULL or an empty string. In my particular case, this would be useful for date fields, where the majority of time the current date will be entered, but users still need the ability to change the date if they so desire.

What is a default value for edit mode, when record already exists?
The value is taken from database.

2. I can't see all the existing data on the columns -- all blank under the edit mode;
